Cinnamon Collagen Pancakes

Serves: 1-2 people
What you need
1 egg
1/2 cup plant based milk
2 tbsp honey
1 cup oat flour
1/2 cup almond meal
2 tbsp
Bellē powder
2 tbsp protein powder of choice
1 tsp cinnamon
2 tsp baking powder
1-2 tsp coconut oil or butter for frying
To serve; grilled banana, almond butter, blueberries, honey, pistachios
Instructions
- Whisk together the egg, milk and honey.
- Add the rest of ingredients and beat until well combined.
- Heat the coconut oil in frying pan. Using a measuring cup, spoon 1/3 cup batter into centre of frying pan. Cook on a medium heat for a few minutes & once bubbles start to form, flip the pancake. Repeat process for the rest of the batter
- Top with grilled banana, almond butter, blueberries, honey and pistachio.
